How can one tell if a horse is in good form? What are the signs?

Any thoughts.

Did you get that from the horse watching book? It's the right number of stars. If so, I actually saw one wink a few weeks back, an amazing spectacle. I felt quite flattered as I was the only other creature in the same paddock.
